Animal Behavior via Dog Training

Instead of the tradition Animal Behavior unit with livestock and progeny, my Animal Science class of non-agriculture students would like to do something related to dog training. I see great potential in this unit as I continue to connect psychology with dog training (positive, negative, reinforcement, punishment) and how to effectively train dogs (motivation). I'm having trouble knowing how to STRUCTURE all of this. I cannot simply provide a dog and have them train him to do tricks. Any ideas and feedback are greatly appreciated, thanks in advance!
