Root, Stem, Leaf, Flower Anatomy

I am student teaching a Floriculture class right now and we are just about to begin identification of the parts of a plant. I do have some microscopes at my disposal, and I would like to have the students sketch the parts that they see (xylem, phloem, stomata, root caps, etc.) but they are a really bad and disrespectful class. Does anyone have activities that they would like to share that I could use with a class like this? Any suggestions would be helpful.
