I looking for a list of supplies that are used to reconstruct the digestive tract of the horse with various equipment that could be purchased at a local hardware store.

I don't do this for a horse's digestive tract, but I do it for a cow's stomach. Here's what I use for each:
Rumen- 50 gal. garbage bag
Reticulum- aluminum foil
Omasum- coffee filters
So, after reading your post, I decided to try constructing a horse digestive tract this year. I put the students into groups and had them bring their own items in. Here was what my favorite group used to construct their tract:
Esophagus- garden hose
Small intestine- slinky
Cecum- plastic water bottle
Rest of the large intestine- pool noodle
Rumen - Spikey rubber ball that is cut and turned inside. It make it look like like villia
Large Intestines - Panty Hose. It lets water out.
Teeth - Two Bricks
Trachea - Vacuum Hose (I know it is not digestive but it is an idea.)
