Seed Propigation

I am teaching Plant Science to my Ag Science II class and would like to teach them about different forms of propigation including scarification, stratification, cuttings, etc. The problem is I'm not sure what type of seeds/plants work best for these experiments. I've researched a bit on the internet, but I've only been able to find out how to do it and not what seeds work best for different methods. I have purchased a Jiffy plastic greenhouse to grow them in. Does anyone happen to have a lesson or some hints for this?  I appreciate the help!
