I am having to teach a food science 2 course next semester. I covered food safety, technology, meat and dairy in Food Science 1. Anyone have ideas for other topics to cover in Foods 2? I will probably go more in depth on those other topics as well.

I teach a year long Advanced Food Science class and these are a few things we do in the spring. I can email you a more detailed plan if you'd like. I usually spend a couple of weeks on bread. There's a lot of good labs you can do with yeast and gluten in this unit. At the end of that unit we make home made yeast rolls in class. I really like the movie Food Evolution. Students watch and complete a movie review. I believe I found one on here somewhere. It's one of the few food movies that does a good job of showing both sides of the gmo and organic issue. It's lead to some really good discussions in class. I've also done a cupcake war in class. We'll watch a couple episodes, and I'll give them a class period to design their cupcakes and come up with a list of ingredients. They bake cupcakes one day and decorate the next. On the second day, after decorating I have 2 or 3 teachers come in and judge, just like they do on cupcake wars. Many students have said it's one of their favorite activities of the year.

I am on the same unit in my Intro class and I am having fun with nutrition label reading...we did a field trip to a grocery store to answer the question of ...Is mama correct ...are the healthy cereals really better for you? First you have to teach them the good and the bad on nutrition labels. Next we made homemade pizza dough to compare homemade to store to delivery...by the way if they can judge this makes for a fun class.
