Set up stations around the room with various pictures, brochures, information, etc. about each breed. Make a "breed booklet" that is blank for them to be able to go around to each station and fill in pertinent information. You could provide small color photos at each station to have them glue/tape into the booklet (or if they're using interactive notebooks).

I think this would be a good approach. Personally, I never saw a huge amount of value of having students memorize breed names (they tend to forget them a week later if they are not a part of that industry). The more important idea is for students to understand how and why different breeds exist, and why this is necessary for the industry. Emphasizing the genetics and the economic basis for breeds is more intellectually stimulating. I liked to give my kids different scenarios (e.g. this group is trying to minimize costs in a feedlot, this group is trying to sell to high-end urban customers, this group is concerned about hardiness, etc.) and then have them use internet searches to find their best option. This pairs real-world considerations with an opportunity for students to develop stronger digital literacy skills, which is a great sell for an administrator.
