What are methods that you use to keep large classes (40 students) productive in the greenhouse?
I feel your pain, but I found my answer here on CoP. I copied the link How do you Organize Greenhouse Operations with Students?
I use to spend my time telling them what to do. Now I just write up a list of things that needs to get accomplished each week and give it to the Group foreman. I will answer questions but I don't tell students what to do. I tell foreman.

Wow! That sounds like a real challenge! There is no cap to class size? I will assume you have exhausted all other avenues for reducing your numbers, your Principal shouldn't believe a class of 40 will be very conducive to learning (but I have been disappointed by administrators before). Do you have a classroom to use in addition to the greenhouse? If your greenhouse is adjacent to the classroom, you could break the class down into groups and have a group working on an assignment while you take a group to greenhouse for a demo or to tend to their plants. I would have them do a lot of cleaning, especially sanitizing pots, sweeping the floor and cleaning up plants. You can have them take cuttings, and transplant those cuttings, plant seeds, transplant those too. This busy work can give that many hands some experience and practice. You will have to be very organized and prepared to make sure you have enough back-up assignments to give out in case the students take advantage of the large class size. Good luck!

Are you capable of establishing a nursery of some kind at or near enough to the greenhouse? Either a shade house or rows of plants? With that many students you can propagate and plant a lot of species and house them near the greenhouse.
