This lab investigates the effects of various sweeteners on the sensory qualities of cupcakes. The substitutes in the lab can be changed to whatever you have available, but keep the amounts the same as granulated sugar so their qualities can be evaluated. An extension could be adjusting the modified recipe to try and match the original recipe's characteristics.
