Used about 3 days for this lesson per species.
1. Students find and write retail cuts on each primal cut paper.
2. Use aggiemeat.tamu.edu/4-h-ffa-retail-identification-cuts/ to go through pictures and explain each retail cut. This site is a great resource: good pictures and follows the CDE contest list.
3. Run through pictures/live cuts for practice.
4. As a review, students place laminated pictures next to words on carcass drawing.
